INGREDIENTS
8 oz mahi fillet
as needed Teriyaki glaze
3 oz pineapple relish
1/2 slice pineapple (slice 1/2 inch)
5 oz fresh vegetable
5 oz rice
3 pineapple leaves
PROCEDURE
- place service side down on grill and cook for 2 and 1/2 minutes
- turn by 1/4 to achieve grill mark and cook for 2 and 1/2 minutes
- flip mahi over and continue cooking for 2 and 1/2 minutes. Baste with teriyaki upon removing from grill
- place pineapple on grill to mark each side
- mound rice in center of plate. Lay Mahi from 9:00 to 3:00 slightly atop rice
- place pineapple relish in center of rice and three pineapple leaves toward 11,12, and 1:00
- place vegetable from 10:00 to 2:00
- place 2 quartered pineapple at 3:00
