INGREDIENTS
1 oz olive oil
10 ea 70/90 shrimp
1 oz roasted pecans
1 oz onion/bell pepper mix
1 oz green onions
a/n Creole Seasoning
a/n salt
1/2 oz white wine
2 oz heavy cream
2 tsp garlic butter
PROCEDURE
- Sprinkle tilapia filet with creole seasoning and saute in olive oil on both sides for about 3 minutes.
- Heat olive oil and sear shrimp.
- Add seasonings, pecans, onion/bell mix, and green onions, saute until onions are translucent.
- Deglaze with wine and reduce for 2 minutes.
- Add heavy cream and bring to a simmer.
- Add 1 tsp of garlic butter to both sides of the pan and toss until incorporated.
- Spoon over fish neatly and serve.
