INGREDIENTS for Sauce
1/4 pound butter
2 ounces yellow onion diced
1 tbsp lemon juice
1 tbsp Worcestershire sauce
PROCEDURE
- Brown the butter over medium heat
- Add diced onion and allow to sweat
- Add remaining ingredients and cook for about one minute
INGREDIENTS for Fish
1 cup white flour
1 tbsp salt
1 tbsp ground black pepper
2 whole eggs
1 cup milk
2 each 8oz filets of Tilapia
4 ounces oil (olive, canola, vegetable etc)
PROCEDURE
- Combine salt, pepper and flour together in a bowl
- Place eggs in a separate bowl and whisk
- Add milk to eggs and whisk until homogenous
- Pat fish dry with a paper towel, place into flour mixture, shake off excess flour, place fish in egg wash and then again into the flour mixture.
- Heat oil in a saute pan almost to the smoking point. Add breaded fish to the oil and cook about two minutes per side. The fish will become a light brown color. Once fish is cooked place on a paper towel to absorb excess oil. Place fish on a plate with your favorite side items and top with Meuniere sauce.
