Spinach Salad with Strawberry Vinaigrette from Chef Bergeron

Strawberry Vinaigrette

1 cup fresh strawberries, washed and de-stemmed
1/2 cup white balsamic vinegar
1 tbsp. Dijon mustard
1 tbsp. strawberry preserves
1 tsp. Cavendars Greek Seasoning
1 tsp. salt
1/2 teaspoon fresh ground black pepper
1 cup extra virgin olive oil

Place all ingredients except oil in a food processor. Turn on processor and slowly drizzle
in oil. Mix for about one minute.


Fresh spinach, washed and dried
Feta cheese
Toasted pecans or walnuts
1 cup of fresh sliced strawberries marinated in 2 tablespoons of white balsamic vinegar with 1 pinch of sugar and 1 pinch of pepper

Strawberry vinaigrette

PROCEDURE: Mix all ingredients well in a salad bowl and toss with Strawberry Vinaigrette to taste.
