Tuna on the Bayou from Not Your Mama's


1 cup sauteed spinach
1 cup cooked spaghetti squash


1 tbsp butter
1 teaspoon garlic
the juice of half a lemon
4oz small shrimp


  • sautee garlic in butter
  • add the shrimp and lemon juice
  • cook until shrimp are pink
  • season with a pinch of salt, a dash of fresh ground pepper, a dash of hot sauce, and a dash of worcestershire sauce
  • add 1/2 cup heavy cream and cook until the sauce thickens
  • season tuna and grill to your liking
  • place the sauteed spinach in a pile on the center of a plate
  • place the spaghetti squash on top of the spinach
  • place the tuna on the squash and top with the shrimp sauce
  • garnish with fried onions
