4 – 6 ounce Boneless/Skinless Chicken Breast
Breading Mixture
2 cups of bread crumbs
1 tbsp granulated garlic
1 tbsp paprika
2 tbsp dried basil leaves
2 eggs beaten with ¼ cup of olive oil
Cover chicken with egg/olive oil mixture then breading mixture and sauté in olive oil until done (6-8 minutes).
Sauce
1 cup of heavy cream
1/2 cup chopped artichoke hearts
1 cup cooked spinach drained
1/2 cup diced white or yellow onions
1 tbsp fresh chopped garlic
2 tbsp olive oil
Combine all ingredients except for spinach until reduced then season with salt, white pepper, and asiago cheese. Add spinach and pour over chicken. Enjoy!
