Strawberry Mascarpone Cupcakes

INGREDIENTS for Cupcakes

1 box Strawberry Cake Mix
1 container mascarpone cheese
1 cup fresh Ponchatoula Strawberries
1/4 cup sugar
1 tsp. lemon juice

PROCEDURE for Cupcakes:

  • Bake cupcakes according to box instructions and let cool.
  • Combine cheese, berries, lemon juice, and sugar in food processor and process until smooth.
  • Cut hole in top of each cupcake and pipe berry mix into each cupcake.
  • Re-cap cup cake with the top of the cut out piece.


1/4 cup water
1/2 cup sugar
1 tsp. vanilla extract
2 cups confectioner's sugar


  • In a saucepan, combine water, sugar, and vanilla extract and simmer over medium heat.
  • In a medium bowl, combine vanilla syrup with confectioner's sugar.
  • Stir until smooth and work quickly to spatula icing on top of cupcakes.
