Season and gill the breaded Redfish over oak and pecan wood. Serve with fresh asparagus sauteed with butter salt and pepper and melted romano cheese. Sauce on the Redfish is Lemon Butter, basil, artichoke hearts, and sun-dried tomatoes.
Lemon Butter Recipe
1 tsp butter
2 tsp finely chopped garlic
2 tsp finely chopped yellow onion
2 tbsp white wine
2 tbsp lemon juice
Kosher salt
Pinch of white pepper
1 stick of (1/4 lb) cold unsalted butter cut into small cubes
