INGREDIENTS
2 lbs crawfish tails
2 lbs shrimp (70-90)
1 large onion
2 teaspoons chopped garlic
2 teaspoons of chicken base
2 seafood base
3 quarts of heavy whipping cream
2 cups of flour
3 cups of parmesan cheese
1 8oz pack of American cheese
1 8oz pack of Swiss cheese
3 to 4 lbs of fettuccini noodles
1 lb of margarine
1/2 cup of parsley flakes
PROCEDURE
Boil the fettuccini noodles until tender then, set aside. Add margarine in an 8 quart sauce pan. Sautee onions and chopped garlic. Add two cups of flour, stirring constantly. Add three quarts of whipping cream, stir until smooth. Add Parmesan, American and Swiss cheeses. Then add chicken base, seafood base and parsley. Let simmer 10 to 15 minutes. Add seafood. Cook until shrimp pink up. Pour over bed of fettuccini noodles. Serve hot.
