Smoked Chicken and Duck Salad from Chef French


1/2 Duck or chicken

Cut the meat off the bones and skin duck or chicken, coat with olive oil and smoke for 2 hours at 200 F. Chill and reserve.

INGREDIENTS for Marinade

1 Tbsp wine vinegar
1/3 cup olive oil
3 tsp sesame seed oil
1 tsp crushed red pepper
1Tbsp soy sauce
1 tsp garlic
1 Tbsp lemon juice
3 tsp tarragon leaves
Home made croutons
Sesame seeds roasted
6 oz fettuccini noodles


  • Cut duck or chicken in small strips and mix well with marinade. This should be done the day before preferably.
  • Serve in a bowl with a leaf of Boston or red leaf lettuce, chopped lettuce of your choice, fettuccini and the duck or chicken on top.
  • Decorate with sesame seeds hard boiled eggs and croutons.
