INGREDIENTS
- Halloumi Cheese
- Olive Oil
- Minced garlic
- Pinch or two of Cayenne Pepper
- Several splashes of Mint extract
- Several cherry tomatoes (optional)
PROCEDURE
- Slice halloumi in several semi thick slices
- Heat oil on high until very hot- and sprinkle in cayenne pepper, stir around
- Take halloumi slices and place them in skillet – Cheese will ‘cook' quickly, but will not melt
- Lightly brown each side of the cheese- and sprinkle with pepper
- Add in three quick splashes of mint extract…
- In the next minute, continue to turn the cheese- making sure it does not over brown
- Add in garlic and stir oil – pulling the skillet off the heat source before garlic turns completely black
- Place cheese slices on plate, and pour remaining oil mixture over it- garnish with sliced cherry tomatoes is desired
