Walnut Crusted Chicken from Chaamps


  • Put bread crumbs and chopped walnuts in a food processor.
  • Blend to a rough consistency.
  • Dust chicken breasts with flour. Drop them in an egg/milk mix.
  • Then roll chicken breasts in chopped walnut/bread crumb mixture.
  • In a saute pan over medium heat, swirl 4 oz. olive oil
  • Add the crusted chicken
  • Cook 2 minutes per side.
  • Place in a 375 degree oven for about 3 minutes or until chicken is a nutty brown color.


  • In a saute pan, cook baby corn, and sliced green pepper, onion, green onion and 1 ½ tsp sesame seeds over high heat for one minute.
  • Add 2 oz. soy sauce. Toss to coat and allow to boil.
  • Add mashed potatoes to a large bowl.
  • Place vegetables evenly around inside of bowl.
  • Place chicken breasts on top.
