INGREDIENTS
1 small eggplant
2 cups seasoned flour
2 cups seasoned egg wash
oil for frying
Crawfish Town USA Seasoning to taste
PROCEDURE
- Batter eggplant in flour, egg wash, and flour again, then deep fry eggplant 3-4 minutes until golden brown.
- Once cooked, sprinkle with Crawfish Town USA Seasoning Blend
- To make it even better, top it off with crawfish etoufee.
