INGREDIENTS
4 lb top round
3 tbs Italian seasoning
2 tbs Salt
2 tbs Pepper
1 tps Cayenne
1 tbs Paprika
1 tps red chili flakes
3 yellow onions chopped
1 garlic clove
3 tbs Worcestershire
1 cup beef broth
2 bay leaves
PROCEDURE
- Combine all dry ingredients and rub over meat, cover and refrigerate for at least 2 hours.
- Preheat oven to 275 degrees
- Place meat in roasting pan with onions and garlic, and 3 tbs of olive oil, sauté until meat is browned, add Worcestershire, beef broth, and bay leaves.
- Put in oven for 2.5 to 3 hours uncovered or until meat temperature is 135 degrees f in center. Remove and let cool then slice very thin.
- Pour broth into sauce pan and add the sliced beef. Place meat on toasted po-boy or hoagie roll. Serve with side of Au Jus.
