Crawfish Pie

Ingredients:

4 Tbsp butter
1 cup chopped onions
1/2 cup chopped green bell peppers
1/2 cup chopped celery
1 and 1/2 tsp salt
1/2 tsp cayenne pepper
1/4 tsp fresh ground black pepper
1/2 cup diced canned tomatoes
1 lb crawfish tails
2 tbsp chopped parsley
2 tbsp flour
1 cup seafood stock
3 eggs beaten
1 cup pepper jack cheese
1 pie crust

Directions:

  • Melt butter in saute pan
  • Add onions, bell peppers, celery & seasonings
  • Sauté over med heat until veggies soften
  • Add crawfish tails, tomatoes, parsley and Stock
  • Simmer until well incorporated
