8oz chicken breast seasoned with our grill seasoning and grill base. It is then grilled over a wood-burning grill. It is topped with a lemon butter sauce, goat cheese, sun-dried tomatoes and fresh basil.
When the chicken is cooking place 2.5 oz of goat cheese on each side of breast.
While the chicken is cooking, 2oz of lemon butter sauce, pinch of basil (nickel size) and 10-12 pieces of julienne cut sun-dried tomatoes are warmed over a medium flame to meld favors.
When the chicken is done it is plated and the lemon butter sauce, sun-dried tomatoes and basil are spooned over the chicken.
Lemon Butter Sauce
Garlic and onion (both finely chopped) are sauteed in clarified butter until soft and transparent. White wine, lemon juice, kosher salt and white pepper are then added and brought to a boil, then heat is set to medium and let to reduce by approx 85% (oatmeal consistency). Heat is reduced to low and cold butter is added a little at a time beating with a wire whisk to from a creamy sauce.
