Yield: 1 1/4 cups dressing, 20 servings of 1 tablespoon each

1/2 teaspoon plain gelatin

4 tablespoons cold water, divided

3 tablespoons lemon juice

2 tablespoons wine vinegar

1/2 cup defatted chicken broth, less salt

3 garlic cloves, pressed

1/4 teaspoon salt

Pinch red pepper

1/2 teaspoon grated black pepper

1 bunch parsley, chopped

2 tablespoons olive oil

3 pounds mixed lettuce greens

3/4 cup freshly grated Romano cheese

1/4 cup crumbled bleu cheese

Sprinkle gelatin over 2 tablespoons of cold water. Let stand about 1 minute. Combine remaining water, lemon juice, vinegar, broth, garlic, salt, peppers and several tablespoons of parsley. Bring to a boil. Remove from heat and stir in gelatin mixture and olive oil. Chill. Whisk before tossing over lettuce and remaining parsley. Sprinkle cheeses and toss again. Add freshly grated black pepper to taste. Enough dressing for 3 pounds (20 cups) of mixed lettuce greens.
