Grilled Chicken Bayou


4 Chicken Breast (~6oz)
Salt/ Pepper
4oz Crawfish Tails
4oz Smoked Sausage, Diced
1/4c Lemon Juice
8oz Heavy Cream


  • Season chicken breasts with salt and pepper. Grill until done, alternating sides (~7 minutes). Remove from grill, place in a serving dish.
  • In a skillet, saute sausage until slightly browned; add crawfish tails and continue to cook until heated through.
  • Pour in lemon juice and heavy cream; cook over medium heat until the liquid is reduced by about half (or desired thickness is achieved).
  • Pour over chicken and serve immediately with your favorite sides.
