3 eggs 1/3 cup green onions 1/3 onions 1/2 cup cheese 1/2 cup sliced boudin salt and pepper Whisk three eggs together in bowl. Salt and pepper to taste. In skillet, saute onions, green onions and boudin for a couple of minutes. Pour eggs into skillet and let stand until eggs are nearly cooked. Add cheese to omlette and fold in half. Cook until eggs are completely done and cheese is melted. Plate up, serve, and enjoy!
