1 ea. small Portabella Mushroom 1 ts. ea. onion, red bell pepper, celery and Mandas hot sausage chopped fine 2 ea. peeled and chopped 40/50 shrimp 1 oz. toasted bread crumbs 1 oz. heavy cream 1 oz. cooked crab claw meat 1/8 ts. Zatarains crab boil 3 oz. shreaded Parmesan cheese 1/4 head thinly sliced iceberg lettuce
Grill mushroom until it begins to wilt. Saute veggies, sausage and shrimp until veggies are wilted and shrimp are cooked. Add all other ingredients except crab and mix well. Fold in crab meat gently and mound mixture on top of mushroom. Melt cheese on a non-stick surface and form while still hot on inverted glass or bowl. To serve: broil mushroom until warm and place inside cheese crisp on top of dressed lettuce.
